  • 200 g Chocolate
  • 100 g Salted Butter
  • 4 uni Yolks
  • 4 uni Egg Whites
  • 3 uni Gelatin Sheets
  • 2 uni Tablespoons of roasted and chopped hazelnuts
  • Chocolate for decoration


  • Hydrate the gelatin with a little cold water and set aside;
  • Melt the chocolate in a bain-marie and add the butter;
  • Beat the egg whites, add the yolks and continue beating;
  • Fold the gelatin into the chocolate with the butter, which must be in a bain-marie, until it melts well;
  • With the mixer at minimum power, add the mixture to the yolks and mix well, then add the hazelnuts;
  • In individual bowls, increase with parchment paper or other material, so that they can be filled higher, in order to obtain the effect of a hot soufflé;
  • After setting the jelly, they are decorated with chocolate and a fruit of your choice.
